Squash Pickles: Taste like Bread and Butter Pickles

I haven't been able to grow cucumbers very succesfully in the past few years, they end up crossing with the wild gourds that grow in the ravines nearby and are gourdy, tough and bitter.  I do ok with yellow squash and zuchinni though.  Here is a recipe for squash pickles that taste just like bread and butter pickles.  I modified a recipe I found somewhere, so it is not really original.

Ingredients:
8 cups squash *I use yellow, yellow zuchinni, grey (Mexican), and green zuchinni--whatever is available.
2 cups sliced sweet onions- slice thin
1 T. non-iodized salt.  I use sea salt, but if u mind slight cloudiness in pickles, use pickling salt.
2 cups ceder vinegar
3 1/2 c. sugar
1 tsp celery seeds
1 tsp mustard seed.  In a pinch I have used powdered mustard and hot chinese mustard powder, but the seeds are best.

Combine squash and onion in enamel kettle, sprinkle with salt and let stand an hour.  U can keep overnight if you run out of time.  Add vinegar, sugar, celery and mustard seeds and bring to boil.  Pack in hot sterlilzed jars.  Bring water to boil in boiling water bath canner.  Place jars into rack and in water.  When water returns to a boil time:  5 minutes or 10 min at altitudes of 1000 -6000 ft.  Over 6000 ft. process 15 min.  I usually put up a couple of quarts of these in freezer jars or recycled jars like mayonaise jars to put in the fridge and eat right away.  If i dont, the family opens all the jars I just canned. (Ball has a new jar with a good seal, heavy duty and it has NO BPA-- the bad stuff in plastic.  These are a lot heavier than the old freezer boxes and have a nice screw top lid.  They are expensive compared to my recycled jars, but very nice).

I have never added the calcium chloride they sell to make pickles "crisp" and these seem just fine to me.  They are a nice crisp pickle, but pretty sweet.  My non piclkle eating friends beg for them as gifts... the only problem for me is the amount of sugar.  For myself they are a once in while treat.  But MMMMMMMM good.  I'd rather have one of these pickle slices than a store bought cookie anytime.   They are pretty too!
